Almond Chocolate Oat Bars

Get the kids involved in the making these yummy bars, or if you don't have kiddo's, bribe a friend's kid!

These bars are especially great for expecting moms and packed with extra protein without all the additive and extra sugars of store-bought bars. Don't forget to make a double batch as these go quick and are freezer friendly.

10 min Prep Time* 25-30 min cool Time * Makes 1 8x8 pan serving 

Dry Ingredients: 

1 cup rolled oats 

1/2 cup almond flour

2 tbsp ground flaxseed 

1/2 tsp cinnamon 

1/2 tsp sea salt 

1/4 baking soda 

Wet Ingredients: 

2 Eggs 

1/2 cup almond butter (alternative nut butter also useable) 

1/4 cup maple syrup 

3 tbsp coconut oil, melted 

1/2 tsp vanilla 

Mix in: 1/2 cup chocolate chips or your choice (vegan or regular - I prefer a 70% dark chocolate)

Instructions:  

1. Preheat Oven to 350F and line the 8x8 inch pan with parchment paper 

2. Mix dry ingredients in a large bowl 

3. Whisk Eggs n a medium bowl and stir in almond butter, maple syrup, coconut oil and vanilla. 

4. Pour wet mixture over dry ingredients,mix until the oats are covered and look wet. Fold in chocolate chips. 

5. Pour mixture into a parchment-lined pan. Press down and smooth out, until even in the pan. 

6. Bake 25- 30 min or until the centre springs back up after a light touch. Allow to cool in a pan, then cut into bars and store in an airtight container. 

** If making double batch use 13x9 inch pan and cook for 5 extra mins **
